Pumpkin Pie Granola

This granola really tastes like a pumpkin pie and it’s loaded with vitamins, fiber, and good fats, perfect for this autumn breakfasts! This recipe is suitable for every diet: refined sugar-free, dairy free, gluten free (with GF oats), paleo, vegan and picky eaters!

  1. Preheat oven to 170ºC (340ºF).
  2. Warm the coconut oil, maple syrup, vanilla and pumpkin puree in a small saucepan over low heat and whisk until the coconut oil is completely melted and all the ingredients are well mixed.
  3. Chop the pecans in a food processor just for 8 seconds (big pieces), and leave some in halves to add later.
  4. In a large bowl mix the oats, pecans, seeds and spices together. Pour the wet ingredients over the dry ingredients and quickly mix with a wooden spoon or spatula.
  5. Spread the mixture evenly onto two baking trays with baking paper and sprinkle some extra cinnamon on top.
  6. Bake for 20-23 minutes to 170ºC, stirring a a couple of times after 10 minutes to make sure it's not burning.
  7. When the granola looks toasty brown remove from oven and let cool completely. The granola will set and harden as it cools (so better if you can wait until next day to eat it!)
  8. Transfer to an airtight container and store for 3-4 weeks. Enjoy it for breakfast with almond milk or as snack! I love it with greek yogurt and fruit... mmmm it's nutty and spiced, and taste like a real pumpkin pie!
